Peanut Butter and Cinnamon Porridge

  • 100g porridge oats
  • 600ml oat milk
  • ¼ tsp cinnamon
  • ½ vanilla pod
  • 2 tbsp Meridian smooth peanut butter
  • 1 tbsp pumpkin seeds
  • 2 tsp flax seeds
  • 2 tsp Meridian date syrup


  1. In a saucepan combine the oats, oat milk, cinnamon and seeds scraped from the vanilla pod. Bring to the boil and gently simmer for 6-8 mins, stirring regularly until the oats are cooked and the porridge is has thickened. If the porridge is too thick for your liking add some water or more milk.
  2. Remove from the heat and stir in the Meridian peanut butter.
  3. Divide between two bowls and top with the seeds and date syrup

Cook’s tip - Experiment with added fresh or dried fruit, yogurt and seeds. If you prefer use ½ milk and ½ water.  And, pop the scraped vanilla pod into a jar of sugar to make vanilla sugar for making cakes or biscuits.
